Sol Kadhi Recipe for Type 2 Diabetics
A Traditional Konkan Drink That Nourishes the Body
Sol Kadhi is a refreshing and flavorful traditional drink from the western coastal regions of India. Popular across Maharashtra’s Konkan belt and Goa, this pink-colored drink is loved not only for its unique taste but also for its digestive and cooling properties. The name itself often inspires people to call it “The Soul Kadhi” because of the soothing effect it provides after a meal.
Traditionally, Sol Kadhi is served as an appetizer or consumed along with rice. In many coastal homes, people drink it after meals to support digestion and provide a cooling sensation to the body, especially during hot and humid weather. Over time, this humble drink has gained popularity across India due to its health benefits.
For people managing Type 2 diabetes, food choices matter greatly. While selecting beverages, many people often wonder whether a particular drink will affect blood sugar levels. The good news is that Sol Kadhi can be a diabetes-friendly option when prepared in a balanced way. Its natural ingredients and digestive benefits make it a refreshing addition to a healthy meal plan.
What is Sol Kadhi Made Of?
Sol Kadhi is primarily made from two main ingredients: coconut milk and kokum. Kokum, also known as aamsul, is the dried outer skin of the fruit Garcinia indica. This fruit is widely used in Konkan cuisine for its tangy taste and cooling properties. When soaked in water, kokum releases a beautiful purple-pink color that gives Sol Kadhi its signature appearance.
Fresh coconut is another important ingredient used to prepare the creamy base of the drink. Coconut is blended and strained to extract coconut milk, which adds richness and smooth texture to the drink. Along with these two main ingredients, spices such as ginger, garlic, green chilies, asafoetida, and rock salt are added to enhance the flavor.
The combination of tangy kokum and creamy coconut milk creates a refreshing balance of taste. This mixture not only makes the drink delicious but also offers digestive and metabolic benefits.

Sol Kadhi Recipe for Type 2 Diabetes
Preparing Sol Kadhi at home is simple and requires only a few natural ingredients.
Ingredients
To prepare this refreshing drink, you will need kokum or aamsol pieces, freshly grated coconut, hot water, ginger or garlic, green chilies, a pinch of asafoetida, rock salt, and fresh coriander leaves for garnishing.
Method
Begin by soaking the kokum pieces in about three-fourths cup of water. Add a pinch of asafoetida and rock salt to the water and keep the mixture aside for around three to four hours so the kokum releases its flavor and color.
Next, grind the freshly grated coconut along with ginger or garlic and green chilies using a mixer or blender. Add a little water while grinding until it becomes a thick paste.
Once the paste is ready, squeeze and strain the mixture to extract coconut milk. This will form the creamy base of the drink. Add some water to the remaining coconut residue and grind it again for a minute. Extract the coconut milk once more and add it to the earlier extract.
This process can be repeated two to three times to obtain maximum coconut milk. However, keep in mind that the milk becomes thinner with each extraction.
After extracting the coconut milk, remove the kokum pieces from the soaking water. Combine the kokum water with the coconut milk mixture and mix well until it forms a smooth pink-colored drink.
Taste the mixture and adjust salt or seasoning if needed. Allow the Sol Kadhi to rest for about an hour before serving. Finally, garnish it with freshly chopped coriander leaves and serve chilled.
Tips for Best Taste
Allowing Sol Kadhi to rest for some time enhances its flavor and allows the ingredients to blend well together. Before serving, remember to stir the drink because coconut milk tends to separate and rise to the top if left undisturbed.
This simple step helps maintain the creamy texture and balanced taste.
